Solid blood, monster mucus, iguana skin flakes ... These are not the ingredients of a JK Rowling's book potion, but of delicacies ready to be enjoyed on the night of Halloween. No need to shiver: they look horrific, but it is only sweets. For the rest, sugar, honey, egg whites, flavorings, colorings and some other ingredient to create a feast of delicious "candy " on Halloween.
The most interesting aspect of these (mini ) recipes is that, with little material and a pinch of science, we can get the candy to look real and taste fantastic. We assume that there are no standard recipes for a Halloween candy, and actually there are dozens of variations. One of the most classic recipes is one for the fruit gelee. Before we see what we need to prepare, it is important to see right which look we want them to have using which molds. If we don't have a scary looking mold we can cut the gelatin slab as we like. Why not shape it like a demonic grin. To make great fruit jellies, we need 200 ml of fresh and filtered orange juice and 250 grams of sugar, grated orange rind, 20 grams of gelatin, 30 grams of butter and a pack of pectin. To start, we put the gelatine in cold water for a quarter of an hour until it softens. Meanwhile, pour the juice into a saucepan and add the sugar, the grated rind , pectin and butter. We put on a low heat and stir while waiting for the mixture to a boil. We can drain the glue sheets and put this into the saucepan , stirring constantly. Once melted , turn off the heat and continue to stir for a few minutes. We then layer a sheet of baking paper on a small bowl (here it depends on desired thickness) and we pour the compound. Once it cools down put the bowl in the fridge and wait at least four hours. To finish, we take the gelatin block and with the boxcutters, we begin to carve it as we like. Obviously, we can carve the block directly with the molds.
Some little advice: in addition to orange juice, we can use any fruit and get different result . Tomato juice makes " bloody " jellies, but the taste might not appeal to everyone. We need to pay attention when it's cooling, it should be done slow before putting it in the refrigerator. The fish glue , once placed in the water, becomes a series of molecules that mixed to the fruit juice must have time to reform a big lattice ready to include liquid molecules. The process of making gelatine happens slowly and makes the best and softest jellies.
If jelly is a good raw material for our Halloween candy, marzipan is even more. For the uninitiated, it is a sweet very plastic ingredient ready to be molded and decorated. A kind of " pastry dough ". To prepare, we need 100 grams of almond flour, 100 grams of icing sugar and an egg white. In a container, such as a bowl, pour all the ingredients, and stir with a spoon until it mixes well. Once this is done, work the dough with your hands until it is quite elastic. This is basic marzipan. Now we can divide it into small parts, working each with a different food coloring. Red is probably more popular, but do not underestimate the horrific power of colors such as yellow and green. Each loaf should be modeled at will. Here it becomes a manual matter: with marzipan you can make human organs such as eyes and hearts, but also dismembered fingers , ears, and , of course, small pumpkins . There are also dyes you can apply with a brush once you get the shape you want. They are the best because they allow us to color in a different way each particular.
As a final touch, why not make sugary blood patches? To do so, it takes 400 grams of sugar, a tablespoon of honey, red food coloring and oil seeds. In a saucepan put the sugar, a few tablespoons of cold water and honey , and then we put it all on a very low flame. Stir until the mixture boils, then add the dye, continue to stir for another two minutes and turn off. On a baking sheet have greaseproof paper, add a little oil, and then pour the mixture on top of it. Divide it into small lumps and quickly shape the patches. With these basic recipes we can create dozens of different sweets that vary in shape, size and color. Make them a few hours before the most anticipated night with fear!
