MAD Symposium 2013 culminated yesterday with a dramatic speech by Brazilian chef Alex Atala who killed a chicken on stage reminding the audience that ''death happens.''
Dubbed MAD3, the two-day food event orchestrated by René Redzepi from Noma and co-curated by David Chang and Lucky Peach took place in Copenhagen and featured over two dozen speakers and many dramatic moments.
The symposium, now in its third year, opened with Italian butcher Dario Cecchini slitting the belly of a hanging pig (pictured below).
What's up with the graphic animal butchery? The symposium's theme this year was Guts and speeches like the ones given by Atala and Cecchini were meant to promote ''conscientious carnivorism'' and respect for animals.

The impressive line-up of speakers included chefs Alain Ducasse, Barbara Lynch and Roy Choi along with Indian environmental activist Vandana Shiva, cookbook author Diana Kennedy and Swedish forager Roland Rittman.
