The Aviary cocktail bar owned by Grant Achatz and Nick Kokonas in Chicago can now lay claim to housing the best bartender in America.
The cocktail bars beverage director Charles Joly was recently awarded the top spot at the Tales of the Cocktail conference in New Orleans.
Joly joined the Aviary team in June 2013 after previously working as a mixologist at the Drawing Room.
The Aviary is known to a detailed approach to cocktail making with bartenders trained as chefs and ingredients sourced fresh on a daily basis.
They have an unrelenting approach to procuring the freshest cleanest ice, as seen in the video below and in 2012 the bar's famous Porthole Infusers that spins ingredients with liquids was made commercially available through a kick starter project.
With the spotlight slowly shifting to great drinks and mixologists, it seems that 2013 may be the year of the bartender.
