The co-founder of The World's Best Restaurant, Claus Meyer, has opened a new restaurant this time leaving his Nordic routes to open a venture in Bolivia.
Called Gusto, the restaurant opened this week in Bolivian city of La Paz - one of the poorest areas of the entire country. Meyer will continue to push the Noma style of ultra modern cooking techniques mixed with the sourcing of local ingredients and a passion for presenting traditional authentic dishes that show of the local area.
Speaking with the Guardian newspaper in the UK Meyer expressed his excitement about opening a new restaurant in a country with such a rich mix of ingredients claiming that he had seen at least 10 fruits in Bolivia that were not available anywhere else in the world.
The restaurant, which will serve tasting menus along side single dishes, will also run as a social enterprise. A cookery school attached to the venue will help teach young, poor, local chefs to cook and all profits generated will be used for local non-profit initiatives.
It seems the restaurant and the philosophy of promoting Bolivia through it's rich and diverse ingredients is a concept Meyer believes in and one that has been mirrored by chefs like Gaston Acurio over in Peru.
Meyer is the co-founder of Noma in Copenhagen, a restaurant that has been voted number 1 on The World's 50 Best Restaurants list, sponsored by S.Pellegrino and Acqua Panna, three times consecutively.
