The team over at the Daily Meal have held an exclusive interview with the ex head chef of Noma, Matt Orlando.
Orlando is set to open his own restaurant, Amass, in Copenhagen in July 2013. Called Amass the venue will have its own garden and source locally produced ingredients from a range of Danish suppliers.
In the interview Orlando discusses the new restaurant, talking a lot of the design and how the restaurant will look and how the food will be set out.
Composed courses plus lots of dishes that can be shared will be on the menu and the chef goes on to talk about how he wants to avoid the strict structure often found in restaurants. He even hints that diners may be asked to leave the table during their meal.
Orlando won't go too far into sharing his menu plans but it's an interesting chat with a chef we're expecting great things from.
