Speaking at Mad Food Camp 2012, Olvera discussed his work at the Pujol restaurant and welcomed on stage an American journalist who has visited him at least 20 times in the last year.
He discussed Mexican cuisine and how it's developed over the past few years, the rich culinary heritage in Mexico and how this heritage is being expressed in food throughout the country.
