First day

The take-away event

Bocuse dOr 2021

For the first event, the teams had to imagine a complete take-out menu based on tomatoes, echoing the new modes of catering that have emerged over the last 18 months. Each team had to include shrimp in the main course, all presented in a box developed by the candidates themselves, including materials of plant origin and reusables.

As the jury are required to remain silent until the final verdict, it is difficult to know if a candidate stands out particularly during the first day. Costa Rica, which did not return its take-out menu on time, nevertheless started with a few penalty points, while Denmark stood out thanks to a transparent box, lit by a lantern.

The 12 countries then presented their platters, with the whole braised beef paleron (shoulder) as the centrepiece, each one more impressive than the next.

As usual, the Nordic countries - Denmark, Sweden and Norway - impressed the audience with some very graphic staging. For the taste, it will be necessary to wait for the verdict of the jury tomorrow evening.

Make sure you follow the rest of the action on day two of the Bocuse d'Or Grand Final live on Fine Dining Lovers, on this very page. Day two will see Estonia, Uruguay, France, Iceland, Japan, Morocco, Finland, Chile, Thailand and Hungry compete. The competition climax will take place tomorrow with the jubilant winners announced at the award ceremony.

In tribute to the work of chefs who have implemented solidarity initiatives and adapted to difficult new working conditions, the prestigious competition is introducing a new prize, the Bocuse d'Or Social Commitment Award.
