The lightly toasted cold-pressed oil is reported to have been developed over a decade, and is produced in a dinky bottle in batches small enough as to guarantee restaurant-grade quality. As for the flavour profile, it's light, bright toasted sesame oil that's well-balanced with a subtle nuttiness.
At Chang's Momofuku empire they use the oil to enhance marinades and salad dressings, to season rice dishes like kimbap, and much more.
