Chef Ana Roš has announced that her Hiša Franko restaurant in Kobarid will finally be able to re-open to guests on 28 May 2021.
The remote restaurant, nestled in the wild foothills of the lush Soča Valley in Slovenia, may seem as far removed from a global pandemic as you can get, but it has had to weather the storm dealt just the same as other restaurants around the world.
After being awarded two Michelin stars just last year, and ranking at no.38 on the World's 50 Best Restaurants list, the restaurant was soon forced to close. The spring re-opening will be a great chance for the team to flex their culinary muscles and once again prove why Ana Roš was the woman to put Slovenia on the gastronomic map.
The new menu is still under wraps, but we imagine you can expect more hyper-local tasting menus with plenty of Roš' personality.
After a team lockdown situation earlier last year, and further uncertainty around opening, Ros has kept busy preserving local food chains, writing a recipe booklet with her team, and selling local cheese, honey and wine online.
