As part of the three-day 50 Best Recovery Summit, running from 13-15 October, The World's 50 Best Restaurants is sharing three, free, online masterclasses with some leading industry professionals.
The first in the series was a masterclass in Japanese cooking with two-Michelin-starred chef Kyle Connaughton from SingleThread farm-restaurant in Healdsburg, California.
This time we get the lowdown on the mysterious art of drinks pairing with Douglas Blyde, international wine and gastronomy expert, who creates a wine and glass workshop.
Sharing some sommelier secrets, Blyde shows us the importance of choosing the right glass. Lead-free crystal becomes the frame for the art inside, and Blyde chooses a white Rioja to show us how to pour wine. Before we enjoy wine with our lips we enjoy it with our eyes. But wine opens up to the olfactory senses, through the nose and mouth, and with over 1000 volatile components, there is much to uncover.
Sharing his genuine passion, Blyde cuts through the pretension and shows us how to truly appreciate wine through his clear communicating style. A red Rioja allows to explore structure and texture and to think about food pairings as a result.
We also get a cocktail masterclass from Giorgio Barginai, who takes us behind the iconic bar at The Connaught Bar, London. We learn how to make two drinks on the menu - The Path and the Mediterráneo cocktails.
Andrea Gualdi from Maybe Sammy, in Sydney will show us how he creates the One & Only and Second Chance cocktails. Krystian Hordejuk from Galaxy Bar, Dubai, shares with us how to mix an M&T Mare and Tonic, and Soy De Mediterráneo.
