Copenhagen’s Amass restaurant is back with a new menu, and a new fried chicken concept called AFC, in a bold move towards more casual dining.
The restaurant has garnered an enviable reputation in the last few years thanks to owner-chef Matt Orlando’s commitment to zero-waste haute cuisine. His aim has been to pursue the lowest possible carbon footprint, while upholding the highest standards of creativity in Nordic-inspired fine-dining.
While the restaurant rode out the coronavirus restrictions, Orlando was able to gather his thoughts and bounce back with a new menu and a brand new fried chicken concept that's perfect for the times we live in.
Unfortunately, Orlando’s ingredient-focussed brewery and pub, Broaden & Build, has ceased operations. But the pivot to fast-casual fried chicken will surely help the group find success in a very new set of circumstances. Despite the turbulent last few months, Amass is still raising the bar when it comes to sustainably sourced cuisine.
