Chef José Andrés took a break from his awesome work to quiz Dr. Anthony Fauci about what safety measures restaurants can implement as they reopen for business after lockdowns are lifted.
José Andrés' World Central Kitchen has been coordinating nationwide efforts to feed those in need during the coronavirus crisis, but the Spanish-born chef took a break from his on-the-ground work to put some pertinent questions to Dr. Fauci in an Instagram Live interview.
Food is a vector for infection according to Fauci, however, if staff follow the protocols, such as staying at home if they feel sick, washing hands and the wearing of masks, then the risk of transmitting the disease to restaurant clients is “extraordinarily low”.

Dr. Fauci gives us his verdict on wearing masks in restaurants, saying that N95 masks are not necessary, and that typical surgical or cloth masks are sufficient. Gloves are optional, but the important thing is to wash hands often and use sanitiser.
Social distancing is critically important, says Fauci, but one important thing he wants to impress on listeners is that the US is a very large country, and people must act according to the type of area in which they operate. People must be mindful of factors such as population density and active infection spikes, but in general Dr. Fauci advises everybody to be careful yet flexible.
