What could be more romantic than plant-based meatless bacon for Valentine’s Day? Well, probably quite a lot, but if you want to score points with the vegan in your life, you could surprise them with this alternative from Prime Roots.
The California-based start-up’s founders Kimberlie Le and Joshua Nixon crowdsourced their market research by asking people to vote for their most desired plant-based product and bacon was the resounding winner.
The meatless bacon is being debuted this Valentine’s Day and is available to ship directly to your door. Prime Roots claims their bacon will look, taste, and sizzle just like the real thing.
The key ingredient in this meatless bacon substitute is Koji, an umami-rich whole food source of protein used in Japan to ferment soybeans for soy sauce and fermented bean paste. Prime Roots claims its home-grown koji superprotein naturally has the texture and umami taste of meat without using hyperprocessing techniques that are normally used in other meat alternatives.
The Koji-based is blended with plant-based fats to create a block of "pork belly" which balances layers of crisp protein and melt-in-your-mouth fat. Next, they put it into a wood smoker for smoky flavour and slice it into bacon strips.
