It has today been announced that Magnus Nilsson will take on a new role as the first Academy Director of the brand new Mad Academy in Copenhagen.
The Swedish chef, fresh from closing his two Michelin starred restaurant Faviken, will help oversee the development of the Academy’s programming as well as sharing his experience and insights with the MAD community.
The MAD academy will be a permanent education centre in Denmark's capital, focusing on sustainable chef-led solutions both in the restaurant and food industry. In his new role Nilsson states "my main focus will be on curating and together with the rest of the team creating truly great content for a school which has the potential to change the way our food system works."
Nilsson shuttered his world-renowned Faviken restaurant in remote Jämtland, in central Sweden, at the end of 2019 to dedicate more time to his family and gardening, until this "dream project" catapulted him back into the limelight reinvigorating his professional dreams.
In a post on his instagram account the reflective chef commented: "What's next? When I decided to leave Fäviken my mind was set to not take on another project, my plan was to not work for a year or two. It felt important to have time to think. To figure out a stimulating way of life where I could actively work on learning new things. I knew I wanted a situation where I could make change, big or small but in a way that was different than with the restaurant. As a point of principal and because I suspected that there was going to be a lot of people telling me what THEY thought I should do next, I promised myself that I was going to decline every offer I was presented with. This regardless how promising it sounded or how lucrative it was described as being. I did exactly that. Perhaps a future regret, who knows… Yet, despite that, here I am telling you that I will be starting a new job @themadfeed As an offer it kind of snuck up on me, stealthily and slipped through a crack in my wall of firm no thank yous."
