The Disfrutar restaurant in Barcelona has been picked as the recipient of the One to Watch Award ahead of the announcement of The World's 50 Best Restaurants list 2017.
Disfrutar is owned and run by three El Bulli disciples, Oriol Castro, Mateu Casañas and Eduard Xatruch who will pick up his award on 5 April at Melbourne's Royal Exhibition Building during the annual World's 50 Best Restaurants ceremony, that will be livestreamed on Fine Dining Lovers here.
Speaking of the award William Drew, Group Editor of The World’s 50 Best Restaurants, said: “Disfrutar showcases the individual talents of these three chefs and broadens their influence on Spain’s culinary scene. Their commitment to pushing the creative boundaries of gastronomy makes them worthy winners of the Miele One To Watch Award.”
Follwing a decade as senior chefs under the legendary chef and restaurateur Ferran Adrià the trio first set out with modern dining restaurant Compartir on the Costa Brava in collaboration with the El Bulli Foundation, before embarking on their most ambitious project to date, Disfrutar, in 2014.
In just two years, the trio have created 170 different courses on their avant-garde menu at the aptly named "to enjoy" restaurant, including signature dishes like macaroni made from gelatin, tossed in truffle foam and smothered in Parmesan at the table and a deconstructed whisky tart where guests are invited to wash their hands in whisky and inhale the aroma as they eat.
The trio describe the restaurant as having daring, modern and fun cuisine and received a Michelin star within just one year of opening as well as collecting other prestigious recognitions.
