You are all set to make a killer batch of cookies when you realize the recipe calls for the one ingredient missing from your cupboard: brown sugar. Don't feel like making a last-minute run to the grocery store? You can still satisfy your cookie craving by making brown sugar at home.
The process is incredibly easy and requires just two ingredients: granulated sugar and molasses. If you are an avid baker you probably have both in your pantry, otherwise it's a good idea to pick up a bottle of molasses on your next supermarket run. Molasses keeps well and is great for many other uses - not just for making brown sugar. This thick syrup has a deep flavor, low glycemic index and is chock-full of vitamins, which makes a nice addition to cakes, muffins and savory dishes like sweet potato gratin.
Once you've stocked up on molasses making brown sugar will be a cinch. You'll need one tablespoon of molasses for every cup of sugar. Just blend them together until you have a homogenous mass. Homemade brown sugar will be fluffier than the store bought variety and keeps well in an air tight container. If it hardens, just pop in the microwave for a few seconds.
