Yeast Free Bread Recipes
Australian Damper Bread
Ozzie chef Curtis Stone bakes up some traditional Australian damper bread, re-living the century-old tradition started by swagmen. It's now a camp food favourite and it helps if you're out in the bush and can bake it in the hot embers of the campfire, like Curtis, but it's not essential!
All you need for this one is plain flour, baking powder, bicarb of soda, salt, butter and cheese. Simply work the ingredients together until breadcrumb-like, add a cup of buttermilk then shape the dough and cook in a cold cast iron pan for up to 40 minutes. Top with more cheese if you choose.
Irish Soda Bread
Ramsay shows how to make a foolproof hot and crusty soda bread.
Again, the ingredients are simple; plain flour, wholemeal flour, salt, caster sugar, and bicarb of soda and buttermilk - which gives it that distinctive sour flavour. The dough is then kneaded and shaped and placed in the oven for 30 - 35 minutes.
Flaky Flatbread
So this one for flaky flatbread by the team at Epicurious takes a bit more preparation time, but it's worth the results. All you'll need are butter, baking powder flour and water.
There are several stages of kneading, proving and rolling before you get to cooking the flatbread on a hot iron plate, but with those flaky buttery results... who's complaining!
