René Redzepi and his Noma team left Australia with a bang after holding one of the famous MAD Symposiums inside Sydney Opera House.
The panel consisted of a number of well-known chefs: David Chang, Massimo Bottura, Kylie Kwong, the food activist Chido Govera, and Australian social researcher Rebecca Huntley.
As with all the MAD events, the focus is on sharing which means we can now watch the videos of the presentations online.
There’s a chat between Rene Redzepi and David Chang, a presentation from local chef Peter Gilmore, a panel of fine speakers and a powerful presentation from Chido Govera.
