Here’s a revealing video showing just the kind of pressure a restaurant is under to make the leap from two to three Michelin stars.
This 1999 episode of the TV show Boiling Point puts us in Gordon Ramsay’s kitchen at his eponymous London restaurant, as the then 32-year-old chef is desperately chasing his third star.
On this particular night, the President of Michelin himself is dining in the restaurant and Ramsay and the kitchen are under enormous pressure. By the end of service two poor Chef de Parties have been demoted to commis and manhadled around the kitchen by Ramsay.
Ramsay didn’t win his third star on this occasion (he would have to wait until 2001), but it’s great to see some of the beautiful food coming out of this famous kitchen.
