He’s also just featured on the Mind of a Chef series with a great video that shows the chef cooking for Eric Ripert. Kinch cooks up a wonderful sashimi that’s accompanied by what he describes a fish toffee sauce, presented in full Japanese style. Ripert, himself known for his fish preparation, certainly seems impressed as Kinch effortlessly prepares and slices the fish.
