What you're about to see is the making of the famous Landhause bacon stick, a creation of Matthew Lief the chef and owner of Landhaus, a farm to sandwich restaurant in Brooklyn.
Although Landhaus is a sandwich shop it's signature dish is a bacon stick, which has been known to turn vegetarians into bacon lovers, a phenomenon Lief can attest to.
The Landhaus bacon stick begins as a smoked and cured pork belly. Then it's wrapped up with thyme and rosemary and baked for hours.
When it's done the skin is removed and the pork belly is grilled until golden and served on a stick. The coup de grace are the topppings that follow: maple syrup and Leif's secret spice mix.
