Guzmán opened Boragó in 2006, where he has spent over 15 years exploring the Chiliean terroir and developing a deep knowledge and connection to the land, it's communities and ingredients. In 2015, Boragó was distinguished for the first time in the select list of The World's 50 Best Restaurants, where it has appeared every year to date and currently sits at no.37. He was also the recipient of the first Sustainable Restaurant Award presented by Latin America’s 50 Best Restaurants.
Guzmán also created the first research centre for food in Chile, which seeks to domesticate native ingredients in a circular way.
