With 17 Michelin stars across 23 restaurants and nine different countries - Alain Ducasse is one of the fine dining heavyweights of the world. His Louis XV restaurant in Monaco is hailed as offering the height of restaurant experiences and in 2013 he was awarded the Lifetime Achievement Award at The World's 50 Best Restaurants.
Ducasse was one of the stars of the show at this year's MAD Symposium, sitting on stage to take questions from the audience and chefs such as René Redzepi, David Chang and Daniel Patterson.

Ducasse really is one of the greats of gastronomy as you can see from the standing ovation offered by the crowd as Redzepi announces the chef's arrival - even joking that he had posters of the chef in his bedroom when he was younger.
