Chef Christopher Kostow and his team are taking The Restaurant at Meadwood (TRAM) on a North American pop-up tour following their 'heartbreaking' loss when the three-Michelin-starred restaurant burnt to the ground in the Northern California’s Glass Fire wildfires last September.
The international pop-up tour, known as 'The Restaurant at … Tour' will take in Chicago, Nashville, LA and Mexico City. But rather than stopping off at famous or fancy places, they've instead chosen to visit people whose cooking they respect, including Mexican legend Enrique Olvera at Pujol in Mexican City, and US chef Sean Brock in Nashville.
"We will use this time to develop the next generation of techniques, to revisit our culture, rebuild the larder lost, and gain inspiration from these restaurants and the cities that they inhabit," reads their website.
Their first pop-up was a sellout success at Atomix in New York with chef Junghyun Park in July. Check out the upcoming dates.
