Today we celebrate the grand finale of S.Pellegrino Live From Milan, an event held during Milan Design Week's Fuorisalone where seven great Italian chefs took the stage during five days. First up was Massimo Bottura, then Davide Scabin (alongside actor Pierfrancesco Favino), Luigi Taglienti, dynamic duo Alessandro Negrini and Fabio Pisani, and Enrico Cerea.
Today, the last chef presenting at Live From Milan was Davide Oldani (whose restaurant D'O has one Michelin star). The chef showcased his marvelous Spaghetti al Pomodoro (spaghetti and tomato sauce) made with mint and confit tomatoes: here is the full recipe.
It was a simple and light dish, that reflects the philosophy of the famous chef. The secret to his spaghetti? Its ''Milanese'' identity, which the chef explained means the pasta was strained while still hard and finished cooking in the tomato sauce.
Aside from the spaghetti dish the chef prepared two appetizers: a colorful pea cream with spicy raisins, fish roe and radish; and thinly sliced anise-infused beet served over cod and topped with a hazelnut cracker.
The sweet ending: a caramel ice cream sandwich with eucalyptus gelato and puffed black rice.
