The Huffington Post's new Chef Short Cuts series has already seen chefs like Grant Achatz and Alex Atala offer up their secret kitchen tips for making great tasting dishes and now they’ve enlisted the help of the Israeli born chef, Yotam Ottolenghi.
Ottolenghi offers up his tips on a key step he believes most people miss when cooking vegetables and that is the use of the grill. The chef argues that not only does grilling bring out a great smoked flavour in vegetables but also provides a wonderful charred look that makes regular veg seem a lot more appealing.
The tips start with the usual suspects, zucchini and eggplant, he then offers tips on combining techniques such as grill then roast and blanch then roast. He even suggests the grill when it comes to adding new and exciting flavours to fruit.
