Another location for Yannick Alléno. The chef, who has three Michelin stars at his eponymous restaurant in Paris, has opened a brand new restaurant... in London. The Pavyllon concept, already present in Paris and Monaco, has been exported to the British capital, to the Four Seasons Hotel London at Park Lane. Alléno's new establishment is designed for every hour of the day, from breakfast to dinner and of course, tea time.
Alléno has called on Chahan Minassian, the famous interior designer, gallery owner and collector for this new setting. He has emphasised using contrasting textures in similar tones to create a timeless, modern setting. The room is also dominated by a bespoke counter seating up to 30 people, allowing diners to watch the ballet in progress in the kitchen. The restaurant can seat 90, in a space featuring a palette of blue-greens characteristic of Pavyllon. An eyecatching seven-metre ceramic wall is custom-made by New York ceramist Peter Lane.
On the plate, diners can count on Alléno's talent to sublimate every moment of the day, with dishes rooted in French gastronomy and techniques, revisited with seasonal British produce. Sauces, which the chef has made his trademark, will be at the heart of the plate, as will extractions, fermentations and cryo-concentrations. Guests from both inside and outside the hotel will be able to enjoy some of Pavyllon's signature dishes: Egg parfait in Paris ham jelly, with crème d'Isigny and Maison Prunier caviar; sea bass with a celery extraction sauce; and a surf and turf of blue lobster and wagyu mille-feuille.
There are also a number of dedicated new creations: vegetable ravioli with spring broth and fragrant oils; steamed Cheddar soufflé, watercress coulis and bacon butter; and lamb with Asian condiments, coriander, dill and black garlic. The offering is complemented by that of Bar Antoine, which also opened a few weeks earlier.
