The Wall Street Journal have done a nice profile on chef Gaggan Anand who owns the Gaggan Indian restaurant in Bangok Thailand.
The 34-year-old chef has trained at the world famous elBulli kitchen with Ferran Adria and has taken his kitchen philosophies with him to Thailand.
Dishes such as Chowpati Year 2050 which includes a sphere of yogurt on a fried-dough is finished with a herbal foam and tamarind chutney. The Indian born chef is taking his cuisine to new heights and the profile suggests he's taken lots of inspiration from his time at elBulli.
The Journal have also managed to get the recipe for this wonderful sounding dish which involves one of Adria's favorite techniques - Spherification.
