Grant Achatz and his team at the Next restaurant in Chicago have released their latest restaurant offering - A Sicilian themed menu that will focus on traditional Italian dishes and courses but with Archatz's usual modernist take on recipes.
A few months ago the Next team, who change their menu and theme regularly, paid homage to Ferran Adria with an elBulli menu that presented some of the most iconic dishes from the Spanish restaurant which was crowned best restaurant in the world five times.
Archatz is know for his unique kitchen approach and unique dish concepts - from his dessert quite literally served on the table to his latest Lamb 86, a dish comprising of 86 different components, his thoughts on the avant-garde and pushing diners expectations at the table lead to some fascinating dish creations.
