Broccoli stem slaw is similar to good ol' coleslaw but shredded broccoli stems take the place of cabbage. Not only do broccoli stems add flavor and crunch but they contain iron, calcium and vitamin C.
Broccoli stem slaw can be enjoyed as a salad or tucked into tacos, burgers and sandwiches. It is good in just about anything.

Broccoli Stem Slaw Recipe
4 large broccoli stems, shredded
2 large carrots, shredded
1/2 cup slivered almonds (optional)
For the dressing:
3/4 cup mayonnaise (regular or vegan)
the juice of one lemon
1 tsp of Dijon mustard
1/2 tbsp white vinegar
salt and pepper to taste
Place the broccoli stems, carrots and slivered almonds in a large bowl.
Blend all of the dressing ingredients together and pour over vegetables. Toss well and allow to sit for one hour in the refrigerator.
