Toss the fennel wedges with the olive oil and balsamic vinegar in a mixing bowl. Transfer to a roasting pan, and roast for 40 minutes until the wedges are fully cooked, and the edges have started to brown and caramelize. Remove from the oven, and the roasted fennel is now ready to use.
