Butter
6 tbsp, divided
Brown sugar
6 tbsp, divided
Nutmeg
1 1/2 tsp ground, divided

Step 01

Cutting an acorn squash in half to roast

  • Preheat the oven to 180°C.
  • Line a rimmed baking sheet with parchment paper.
  • Slice the acorn squash in half with a heavy-duty knife, then scoop out the seeds with your hands.
  • Turn the acorn squash halves flesh-side down onto the prepared baking sheet.
  • Then place in the pre-heated oven, and bake until the squash begins to soften, approximately 30 to 45 minutes.

  • Remove squash from the oven and turn so the flesh is facing upwards.
  • Divide butter and brown sugar evenly among the squash halves.
  • Sprinkle with a pinch of nutmeg and season to taste with salt and pepper.

 

 

Step 03

  • Return squash to the oven and bake for another 30 minutes or until the squash is cooked through and soft when pierced with a fork.
