Pumpkin
2, pounds flesh, rind and seeds removed
Oranges

Apple cider vinegar
200 ml
Cloves

Star anise

Preparation

Finely chop the pumpkin flesh.

Peel the oranges and coarsely chop the flesh.

Peel and chop the onions.

Rinse the chili peppers.

Remove the stems and slice into rings.

Bring the pumpkin, onions, chilis, vinegar, cloves, star anise, sugar, salt and approximately 250 ml/1 cup water to a boil.

Lower the heat and simmer, stirring occasionally for approximately 40 minutes.

Stir in the oranges and cook for an additional 5 minutes.

Fill the prepared jars with the chutney.

Close tightly and allow to cool.
