How to make Cheddar cheese potato soup

Step 01

Melt the butter in a large pot over a medium heat. Add the chopped onion and cook until tender for around 5 minutes.

Step 02

Add the potatoes and chicken broth to the pan and bring to a boil for 3 minutes. Reduce the heat, cover and allow to simmer for 20 minutes until the potatoes are fork tender.

Step 03

Slowly add the Cheddar cheese and heavy cream, and stir to combine. Add salt and pepper to taste. Serve warm with a side of crusty bread.

 

Tips & tricks

For the best potato and Cheddar cheese soup make sure you choose the right potatoes for your recipe. We’d recommend the Yukon gold variety, if you can find them in your grocery store, as they’re one of the best all-rounders. If you can’t find Yukon gold, look for another waxy potato, like a red bliss, to get the best texture and flavors in your soup. We’ve included the step to peel the potatoes for this recipe, but some chefs will choose to leave the skin on. If that’s your preference, just make sure you give them a good scrub first before cooking. In the recipe above, we’ve used Cheddar cheese given the title of the soup. Cheddar is one of the best cheeses for soup, as it has a lower melting point and higher moisture content than many other cheeses. If you’d like to try an alternative, however, Monterey Jack or Colby cheese will work brilliantly in this soup recipe too. If you add the cheese too quickly or over too high a heat, you may find it turns a little clumpy in the soup. To prevent this happening, add the cheese gradually and over either a low heat or residual heat. If you want to add a few extra toppings for a nice presentation, then crumbled bacon and fresh chives pair perfectly with the flavors of this soup, and add a color pop to the top. Of course, a couple of crunchy croutons are always a welcome addition to a bowl of warm soup. If you want to make the soup even cheesier, you could also grate more Cheddar cheese over the top.

We’ve included chicken broth in this recipe, as we love the hint of umami this brings to the dish and the slight saltiness it adds too. But if you’d prefer to keep your soup plant-based, vegetable broth can be used interchangeably with chicken broth.

Storage

Cheddar potato soup can be stored in the fridge for up to three days in an airtight container and you can easily reheat it on the stove when you’re ready to eat the leftovers.
