Rice noodles
200 g
Cucumber
1, cut into thin strips
Carrots
1, cut into thin sticks
Shallots
2, thinly sliced
Bean sprouts
55 g
Chili pepper
3 red, seeds removed and cut into rings
Nuoc Cham sauce
6 tbsp
Coriander
leaves, shredded
Mint
leaves, shredded
Garlic
5 cloves, chopped very finely
Chili pepper
5 red, seeds removed and chopped very finely
Fish sauce
50 ml
100 ml
Rice vinegar
50 ml
Sugar
55 g
Lemon juice
1 large lemon

Preparation

Step 01

  • Cook the noodles in boiling, salted water for 2 minutes. Drain, refresh in cold water and drain thoroughly. Set aside.
  • Put the noodles, cucumber, carrots, Nuoc Cham sauce, shallots and chillies (reserve a few for the garnish) into a large bowl and mix.
  • Serve on plates sprinkled with coriander and mint and the reserved chilli rings.

Step 02

For the sauce

  • Put all the ingredients except the lemon juice into a pan and heat until very hot, but do not boil.
  • Remove from the heat and leave to cool completely.
  • Stir in the lemon juice when the sauce is cold.
