Cucumber and Mint gazpacho
Try this cucumber and mint gazpacho perfect for summer: it's a fresh green alternative to the traditional Spanish gazpacho, without tomatoes.

Cucumber
2, halved lengthways, deseeded and diced
Mint
2 - 3 sprigs, leaves removed, some set aside to garnish
Crème fraîche
50 g
Ice
1 handful, cubes
Milk
100 ml
Lemon juice
Horseradish
Preparation
How to make a delicious cucumber and mint gazpacho
Puree together the cucumber, mint leaves, crème fraîche and the ice cubes.
Add the milk (or water if preferred) until the desired consistency is achieved.
Season with salt, lemon juice, horseradish and ground black pepper.
Transfer to glasses and serve your cucumber and mint gazpacho garnished with mint leaves.
