Giacomo Giannotti
Tuscan-born Giacomo Giannotti grew up in his family's ice cream bar, before pursuing his passion for mixology, first in London, then in Barcelona, where he opened his first bar in 2015. Named Paradiso, it was crowned Best Bar in the World in 2022 by The World’s 50 Best Bars.
His speakeasy-style cocktail bar is accessed through a retro-style fridge door inside a pastrami shop has won a global reputation for its in-depth research, detail and skill for mixology.
Giannotti first trained as a bartender in London for four years, refining his mixology technique at Eclipse Cocktail Bar and Be At One. Departing for Barcelona's sunnier climes, he honed his skills at Eclipse Bar of W Hotel in Barcelona, and then at Ohla Hotel, under the mentorship of maestro Giuseppe Santamaria.
Since opening Paradiso, he has also opened Galileo, a cocktail bistro in Barcelona with a modern reinterpretation of the Italian aperitif with tapas, showcasing traditional flavours of Italian cuisine, signed by chef Gabriele Milani.
