Preparation

Spicy Potato Soup Recipe with Scallops

To prepare a spicy potato soup recipe with scallops first heat the oil in a large pan and gently cook the leek until it is soft but not brown.

Add the potatoes and cook for 2 minutes, stirring from time to time.

Remove the outer leaves from the lemon grass, chop the tender leaves and add to the pan with the chilli.

Stir for 1 minute then add the fish stock and the fish sauce, bring to the boil and simmer for about 15 minutes, until the potatoes are cooked.

Season to taste with salt and pepper.

Meanwhile heat the butter in a large frying pan and quickly fry the scallops for about 1 minute each side.

Take out and cool slightly then slice in half horizontally, add to the hot soup and reheat for about 10 seconds.

Ladle the spicy potato soup into deep plates and serve garnished with coriander.
