Little tunny is not currently overfished, therefore it is a good alternative for those who enjoy delicate meats with few bones, typical of red or yellow fin tuna.
Wash and dry the tuna and remove the skin. Mix the olive oil and honey in a bowl. With a zester, zest the orange and lemon peel, then add them to the oil and honey.
Place the tuna in a food vacuum bag and add the citrus sauce. Close the bag and place it in the dishwasher.
Start the Quick Wash. At the end of the cycle, store the tuna in the refrigerator if you'd prefer not to eat it right away.
Before bringing it to the table, open the vacuum bag and pour the cooking marinade into a saucepan, then add the lemon and orange juice, reducing it until it is halved and caramelized.
Heat the pan. When hot, sauté the tuna quickly on both sides. Cut into thin slices and divide onto dishes, basting with the citrus sauce.
Add salt and pepper, then serve.
