Sesame oil

Pork
150 g, minced
Garlic
2 cloves, crushed
Scallion
10, sliced
Chilli bean paste
2 tbsp
Beans
1 tbsp, fermented, black
Pepper
2 tsp, powdered Sichuan
Chicken stock
250 ml
Tofu
400 g, cubed
Sugar
2 tsp
Soy sauce
2 tsp, light
Cornflour
2 tbsp

Preparation

How to Make Mapo Doufu, Tofu and Pork from Sichuan

To prepare the mapo dofu, a Chinese recipe for tofu and pork, first heat the oil in a large wok until smoking then fry the pork until browned all over.

Add the garlic and the spring onions and stir fry for 2 minutes.

Stir in the chilli bean paste, black beans and Sichuan pepper and cook for 3 minutes then gradually add the stock.

Bring to a boil then turn down the heat and add the tofu.

Gently simmer for about 5 minutes then stir in the sugar and soy sauce.

Season with salt to taste.

Mix the cornflour with a little water and stir into the dish.

Simmer until thickened and serve the mapo doufu (Chinese tofu and pork) with boiled rice.
