Red quinoa
200 g
Soy Beans
200 g, green
Limes
1, juiced
Rice vinegar
1-2 tbsp
Sesame oil
4 tbsp, light
Parsley
2 tbsp, freshly chopped
Pepper
1, finely diced
Onion
1, red, finely diced
Mango
1, chopped

Preparation

To prepare an easy red quinoa salad rinse the quinoa and tip into boiling salted water. Boil for around 10 minutes. Take off the heat, cover and leave for around 10 minutes to finish swelling. Transfer to a bowl and leave to cool.

Meanwhile, cook the beans in boiling salted water, quench in cold water and drain.

For the dressing, mix together the lime juice, rice vinegar, oil, parsley, a pinch of brown sugar, salt and ground black pepper. Check the seasoning.

Mix all the salad ingredients through the dressing and serve the red quinoa salad.
