Fava Bean Soup with Fried Bacon
An easy and tasty fava bean soup with crispy bacon is the perfect starter to a summer meal: it's simple but delicious, try this recipe at home!

Oil
2 tbsp
Shallots
3, finely chopped
Fava beans
500 g
Vegetable stock
1 1/2 litres
Crème fraîche
1 tbsp
Bacon
6 slices, crispy fried
Crème fraîche
3 - 4 tbsp
Preparation
To prepare the fava bean soup start hating the oil in a large pan and cook the shallots for 10 minutes until softened.
Add the fava beans and cook for 2 minutes. Add the stock and bring to a boil. Simmer gently for 20 minutes until the beans are tender.
Add the creme fraiche and cool slightly.
Transfer the soup in batches to a blender or food processor and blend until smooth. Return to the pan and reheat gently.
Pour into serving bowls and add a swirl of creme fraiche. Crumble over the bacon and enjoy the fava bean soup.
