The Grace restaurant in Chicago owned and operated by chef Curtis Duffy received its third Michelin star in the 2015 guide yesterday. Duffy took to facebook to post a wonderful pic of the team celebrating what he said was a ‘humbling day’.
Duffy has has a wonderful career, working at Charlie Trotter’s, Trio and eventually as the chef de cuisine at Alinea when the restaurant opened in 2004.
He’s equally talented as a pastry chef, the position he filled while working at Trio, picking up the Best Innovative Pastry Chef from Food & Wine while he worked there.
He opened Grace in 2012 and the international world took note in 2014 when the restaurant went straight to two-stars in the Michelin Guide, following up a year later with a third shows just now strong the restaurant has been performing.
The restaurant operate two 8-12 course tasting menus called, Flora and Fauna. Flora looks to highlight vegetable while Fauna focuses on seafood and protein. Below is a small selection of some of the highly creative and wonderfully colourful creations from Duffy and his team at Grace.
Corn shoots, coconut and basil.
Heirloom Tomato, raspberry, burrata, basil.
Rhubarb, red wine, cream cheese, lemon verbena.
Scallop, tamarind, smoke and flavors of licorice.
Chocolate, strawberry, whisky, bergamot.
