Peach and tomato salad

Peaches and tomatoes might not sound like the most natural combination for a salad, but the sweetness of the peaches pairs beautifully with the tart, tangy, and balanced flavors of heirloom tomatoes. A quintessential summertime salad, the peaches and tomatoes are mixed with burrata cheese for a creamy addition to the plate. Find our favorite peach and tomato salad recipe below.

How to make peach tomato burrata salad

Step 01

Combine the sliced red onion, pitted peach wedges, thick heirloom tomato slices, and cherry tomatoes in a large mixing bowl.

Step 02

Mix the extra virgin olive oil, honey, salt, and black pepper in a small bowl and whisk together. Drizzle the oil mixture over the onion, peaches, and tomatoes. Toss to ensure it’s all coated, then mix in the burrata and garnish with the fresh basil leaves to serve.

Tips & tricks

We’ve shared a simple two step recipe above to make this salad quick to pull together, but there are lots of ways to add complexity to the dish. Some chefs will introduce white wine vinegar to the olive oil mix to bring a tangier flavor depth, and you could add lemon zest, oregano, and thyme to the seasoning if you want to make the flavor of the salad even more sophisticated. It’s also possible to twist this into a peach and tomato Caprese salad. Instead of tossing in a bowl, then you’d want to present this one as you would a classic Caprese salad, layering in peaches with the sliced tomatoes and mozzarella for an appetizer that’s a little unexpected. We like a mix of heirloom tomatoes and cherry tomatoes in this salad, for a combination of thicker slices and different sweetness levels, but there are so many types of tomatoes that you could swap into this salad to personalize it to your taste. Though we’ve shared our favorite peach and tomato salad recipe above, lots of chefs will add other ingredients like crunchy pumpkin seeds or different sorts of cheese like mozzarella to the salad.

If you have lots of peaches leftover in the kitchen after making this dish, try your hand at some other peach-based recipes, like the classic peach melba dessert, or refreshing peach yogurt pops for a hot day. How to serve it

Serve your peach and heirloom tomato salad freshly made in a large bowl in the center of the table, so your guests can enjoy the stunning colors of this salad together. It’s tasty on its own as a salad course, or with a side of fresh crusty bread to mop up all of the burrata.

Storage

This salad should stay fresh in the fridge in an airtight container for up to three days. If you make too much for your guests to eat, then this is a perfect leftovers lunch to enjoy throughout the week after your dinner party or lunch.
