Burrata toast

Avocado toast has long dominated brunch menus, but there’s plenty more to be discovered when it comes to elevating your toast game. For something a little more elegant, we’ve shared our favorite burrata toast recipe below. With a delicious mix of creamy burrata, crunchy artisan toast, and mouth-watering tomatoes, this is the only brunch recipe you need for when tomatoes are fresh in season. Ready in just 30 minutes, it’s ideal for entertaining guests at the weekend.

Sourdough
2 slices
Olive oil
1.5 oz/3 tbsp
Garlic
1 clove
Cherry tomatoes
7 oz/200g
Black pepper
to taste
Salt
to taste
Burrata

How to make burrata tomato toast

Step 01

Preheat the oven to gas mark 6, 400°F/180°C fan (or 200°C conventional). Drizzle the bread with half the olive oil, rubbing gently into both sides, and then place onto a baking sheet and bake for 10 minutes. 

Step 02

Once the bread is toasted, remove from the oven and rub the garlic clove into the bread. 

Step 03

Using the same tray for the toast, place the cherry tomatoes onto the tray and drizzle the tomatoes with the remainder of the olive oil. Season with the black pepper and salt and then give the tomatoes a big mix up. Roast in the oven for around 10 minutes, until the tomatoes are bursting. 

Step 04

Whilst the tomatoes are cooking, spread a healthy helping of the burrata onto each piece of toast. When the tomatoes are ready, remove from the oven and then scatter across the burrata as desired. 

Step 05

Garnish with fresh basil leaves, and season with salt and black pepper. The burrata toast is then ready to serve.

 

Tips & tricks

Burrata is a creamy, Italian cheese that's a softer version of mozzarella. If you’re going to serve burrata toast for guests, then we recommend picking-up your burrata from the dedicated cheese counter, and making sure you get the finest burrata available on the market. Cherry tomatoes are the top choice for this dish with their more concentrated flavors, bringing a sweetness which balances out the indulgent creaminess of the burrata. Given its simplicity, the quality of the bread you use will largely dictate the overall outcome and success of this dish. As a result, we think this recipe is best when made with fresh sourdough bread that’s been baked that day. Variations of the recipe

It’s easy enough to tweak the recipe above to suit personal preferences and make your dish even better with additional ingredients. Firstly, balsamic glaze, a syrupy version of balsamic vinegar, adds a new texture to the dish and an umami-focused flavor profile. Burrata avocado toast is another popular variation on this recipe. Simply add slices of ripe avocado to the top of the burrata for a color pop on the plate. If you do decide to add avocado, a squeeze of fresh lemon juice over the top helps to keep the avocado fresher for longer. Some chefs will also opt to introduce a sweet ingredient, and add fruit like sliced strawberry to the top of the burrata. Lastly, smoked salmon is another classic flavor combination with burrata and ideal if you’d like to add additional protein to your brunch time dish and keep it savory.
