TV chef Nigella Lawson’s Marmite Spaghetti recipe is back after ten years and it’s as divisive as ever.
The original recipe for her spaghetti with Marmite, butter and cheese appeared in her book Kitchen ten years ago and it proved controversial.
Lawson again shared the recipe on Twitter and it still got a reaction, with some people ‘recoiling in horror’. However, others claim that it’s been their comfort food of choice for years.
Whatever your thoughts about Marmite, this spaghetti recipe is bound to trigger Italians. Posting the recipe online, Nigella revealed that she is not, in fact, the originator of the recipe: "So many of you know and love this already, and the rest of you are probably horrified by it: #RecipeOfTheDay is Spaghetti with Marmite. (Australians may obviously use Vegemite.)"
She added: "And Italians, don’t shout at me: this comes via the great Anna del Conte!"
Lawson pinched the recipe from Italian-born food writer, del Conte, from Milan, who is 95 years-old, and whose memoirs Risotto with Nettles also included the dish.
Marmite, the British pantry staple made from yeast extract, has for years had its fair share of devotees and detractors. However, chefs have often reached for the jar when they're looking for a quick bang of umami. The renewed interest in fermented flavours has given Marmite, and Vegemite in Australia, a new generation of admirers.
Even the great Rene Redzepi favours the tangy sandwich spread as you can see in the below video from British television where he makes a scallop sandwich with it.
