The idea was born for fun at the Caseificio Viscanti di Altamura in Italy, after a customer suggested the bizarre idea of ​​making a burrata with gorgonzola filling about a decade ago,

After pondering on the idea for a while Giovanni Visconti and his brother decided to give it a go and encouraged by friends reactions, persevered until the burgonza was born.

The rest is history and burgonza is now the artisanal dairy's flagship cheese, where sales exceed those of beloved burrata.
