Why Waste?

Over one billion tonnes of food is wasted yearly, contributing up to 10% of global greenhouse gas emissions (UNEP). Chefs can change perceptions and show that food waste can create delicious meals, helping the environment and tackling hunger. This is the idea behind the Why Waste? series by Fine Dining Lovers, in collaboration with chef Massimo Bottura and the Food for Soul non-profit organization.
