When it comes to the much loved snack of chocolate the general population has only been consuming the stuff for around 200 years. Before that it was a privileged ingredient enjoyed by the elite, royalty and the rich.
This infographic from Chocolution sets out to highlight this fact and how we are now heading towards a new trend of micro-chocolatiers who are working towards creating new varieties of raw pure cocoa.
It also shows how the amount of processing during the production of chocolate has varied throughout history.
It's an interesting look at an industry that is constantly evolving and if it's anything to go by the next big demand is going to be for a rawer, less processed and much more pure form of cocoa.
