One of our favorite video production teams, The Perennial Plate, have been on a mission to Modena in Italy to visit the charismatic chef Massimo Bottura at his three Michelin starred Osteria Francescana restaurant.
The team say they never really planned to make a video with Bottura but after just a few minutes with him they were drawn to his charm and found themselves producing the beautiful video below.
Bottura discusses his work in the kitchen and how Italian cuisine has been stuck in tradition, how chefs have followed traditions that are over 1000 years old and how now Italy is seeing a change in it's methods of cooking.
It's a great look at Bottura and purely captures the essence of what his unique and thought provoking cooking is all about.
